  • 1 lb (450 g) beef (flank steak or sirloin), thinly sliced*
  • 2 1 red bell pepper, sliced* 1 green bell pepper, sliced*
  • 1 1 red onion, sliced* 1 tbsp fresh ginger, grated*
  • 3 cloves garlic, minced* 1–2 tbsp oil (for cooking)
For the Sauce: *¼ cup soy sauce* 2 tbsp brown monkfruit sugar (instead of regular sugar)* 1 tbsp cornstarch* 1 cup beef broth* 1 tbsp rice vinegar* 1 tsp sesame oil For serving:* Brown rice, cooked* Optional: green onions, sesame seeds

Method
 

  1. 1. Prepare the sauce
    * In a bowl, whisk together: soy sauce, brown monkfruit sugar, cornstarch, beef broth, rice vinegar, and sesame oil. Set aside.
    2. Cook the beef * Heat a large pan or wok over high heat. * Add oil, then sear the beef quickly (2–3 minutes) until browned. * Remove and set aside.
    3. Cook the vegetables * In the same pan, add a bit more oil if needed. * Add red onion + bell peppers and stir-fry 3–4 minutes until slightly tender but still crisp.
    4. Add aromatics * Stir in fresh ginger and minced garlic. * Cook for 30–60 seconds until fragrant.
    5. Combine everything * Return the beef to the pan. * Pour in the sauce and toss well.
    6. Finish * Cook 1–2 minutes until the sauce thickens and coats everything beautifully.
    7. Serve * Spoon over warm brown rice. * Top with green onions or sesame seeds if you want that extra finish.
