I’m not a gourmet chef. I don’t thrive on perfectly timed, multi-dish meals where everything magically finishes at the same time. Nope. That’s not my ministry. I’m a sheet pan meal, crockpot meal, single pot meal get-it-done girl. If it’s simple, hearty, and doesn’t require me to babysit five burners, I’m in.
So today, I’m sharing one of my go-to weeknight wins: a sheet pan dinner using kielbasa, squash, potatoes, onions, and broccoli. It’s garden-friendly, budget-friendly, and sanity-saving. Best part? You can have it in the oven in 10 minutes flat.

Let’s be real—life is busy. Between work, kids, laundry, and trying to remember what self-care even is, dinner needs to be easy. Sheet pan meals are the MVP because:

Ingredients You’ll Need
Here’s what I used, but feel free to swap based on what’s in your fridge or garden:
- 1 package of kielbasa, sliced into halves
- 1 large yellow squash, sliced
- 3 medium potatoes, cut into 1/2 inch pieces
- 1/2 large onion, diced
- 2 cups broccoli florets (or 1 bag frozen broccoli)
- 2–3 tablespoons olive oil
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Optional: smoked paprika, Italian seasoning, or whatever spice blend makes you happy

How to Make It
- Preheat your oven to 375°F.
- Chop everything into bite-sized pieces. No need to be fancy—just aim for similar sizes so they cook evenly.
- Toss it all in olive oil, garlic powder, salt, pepper, and any extra seasoning you love.
- Spread it out on a parchment-lined sheet pan. Don’t overcrowd—use two pans if needed.
- Roast for 30–35 minutes, flipping halfway through. You’re looking for golden edges and tender veggies.
Tips & Tricks
- Want crispier potatoes? Roast them for 10 minutes before adding the rest.
- Add shredded cheese or a drizzle of balsamic glaze at the end for extra flavor.
- Leftovers make a great lunch—just toss them into a wrap or over rice.

- Cut potatoes, onions and kielbasa and put on silicone mat on your cooking sheet. Add half the olive oil and garlic powder and stir around. Put in oven and cook for 10 minutes at 375*. While you're waiting on this to begin cooking go ahead and cut up the squash, zucchini and broccoli. When the timer goes off add this to the cooking sheet pan and stir everything around again and add the rest of the olive oil and spices. Then cook 25-35 minutes depending on your level of doneness. It takes that long for me to get my potatoes done. But I don't like my broccoli burned so I really watch it at the 23 minute mark. Take out, plate up and serve. Delicious!
