There’s nothing quite like a spontaneous girls day at a local vineyard to remind you how refreshing friendship—and good food—can be. Recently, I spent the afternoon with some longtime friends at a beautiful Tennessee vineyard. The sky was overcast (which in the South means mercifully less heat and humidity!), and I was in the mood to bring along something savory to share.
I thought back to one of my go-to party favorites: Spinach Artichoke Dip. I used to make it all the time, but somehow, it had slipped off my radar in recent years. The moment I remembered it, I knew it had to make a comeback—so off to the store I went!

From Slow Cooker to Instant Pot: A Quick Dip Fix
After a quick grocery run, I realized I had less than two hours before I needed to head out. My slow cooker version of the dip takes at least two hours, so I needed a faster option. Enter: my Instant Pot—a total lifesaver in the kitchen.
With just one pot, quick cook time, and zero need to wring out the spinach, this method turned out to be a game changer.

- Add artichoke hearts (might need to chop them smaller), spinach (you do not have to warm this or wring the water out, the instant pot needs the water in the spinach), knorr vegetable dip, yogurt, mayonaise, cream cheese to the instant pot.
- Turn vent to steam and set manual pressure for 3 minutes. After that is done allow it to natural pressure release for 10 minutes.
- Open it up, pour into your container you'll be taking it in, stir in sour cream and add parmesan cheese to the top. Cover and take!
