Easy Instant Pot Spinach Artichoke Dip Recipe – Perfect for a Girls Day Out

There’s nothing quite like a spontaneous girls day at a local vineyard to remind you how refreshing friendship—and good food—can be. Recently, I spent the afternoon with some longtime friends at a beautiful Tennessee vineyard. The sky was overcast (which in the South means mercifully less heat and humidity!), and I was in the mood to bring along something savory to share.

I thought back to one of my go-to party favorites: Spinach Artichoke Dip. I used to make it all the time, but somehow, it had slipped off my radar in recent years. The moment I remembered it, I knew it had to make a comeback—so off to the store I went!

From Slow Cooker to Instant Pot: A Quick Dip Fix

After a quick grocery run, I realized I had less than two hours before I needed to head out. My slow cooker version of the dip takes at least two hours, so I needed a faster option. Enter: my Instant Pot—a total lifesaver in the kitchen.

With just one pot, quick cook time, and zero need to wring out the spinach, this method turned out to be a game changer.

Servings: 8
Course: Appetizer
Cuisine: American
Ingredients Equipment Method

Ingredients

  • 1 1.4 oz package of Knorr Vegetable Recipe Mix
  • 1 8 oz pkg Neufchatel cheese or cream cheese
  • 1 cup yogurt full fat (if you're doing instant pot full fat is better)
  • 1/2 cup sour cream
  • 1/2 cup mayo (Dukes is best)
  • 1 15 oz bag package frozen chopped spinach
  • 1 1/4 cup parmesan cheese (real not fake)
  • 1 12 oz jar of chopped or quartered artichoke hearts that are marinated

Equipment

  • 1 Instant Pot
  • 1 wooden spoon

Method

  1. Add artichoke hearts (might need to chop them smaller), spinach (you do not have to warm this or wring the water out, the instant pot needs the water in the spinach), knorr vegetable dip, yogurt, mayonaise, cream cheese to the instant pot.
  2. Turn vent to steam and set manual pressure for 3 minutes. After that is done allow it to natural pressure release for 10 minutes.
  3. Open it up, pour into your container you'll be taking it in, stir in sour cream and add parmesan cheese to the top. Cover and take!

✅ Why You’ll Love This Instant Pot Spinach Artichoke Dip

  • No wringing spinach – Just toss it in frozen and let the Instant Pot do the work.
  • Quick cook time – Perfect for last-minute gatherings or when you’re short on prep time.
  • One-pot convenience – Minimal cleanup with maximum flavor.

I’ll be honest—I’m never going back to the slow cooker version. This Instant Pot method is faster, easier, and just as delicious.

Don’t have an Instant Pot? You can still make it in a slow cooker—check out the crockpot version here.

🥂 Food, Friendship, and Life

There’s something special about reconnecting with people from your past. Our girls day was filled with laughter, memories, and stories from high school—even though some of us didn’t hang out back then (okay it was just me that didn’t hang out back then). Life has a funny way of bringing people together when it matters most.

As we sat together, sipping wine and sharing snacks, I was reminded that aging is a gift. It softens the edges, deepens the connection, and helps us find common ground. Rich or poor, young or old—we’re all just trying to make it through, and good friends (and great food) make the journey that much sweeter.
