With the way things are priced now I am trying to get every dimes worth out of everything I use/eat. So when we bought the rotisserie chicken I couldn’t wait to see how much we could do with it. The first meal we had was when we brought it home. We were starving. So we cut the one breast up and put it on top of a salad. That was meal one. That was enough to feed my daughter and I.

Meal number two was chicken salad. This fed 4 of us approximately 6 sandwiches. I used the rest of the breast, the other breast and some of the dark meat from the thigh. I added 1 chopped stalk of celery, 8 grapes cut in thirds, 1 cup of Duke’s mayo, 1 green onion sliced utilizing just the green part. Mix and serve on bread or sourdough. So delicious! I forgot a picture as I was just eating and the idea for this post came after! haha
Meal number three was baked enchiladas. I used the rest of the dark meat and pulled all the meat off the bone. Then I cooked just basic white rice in my instant pot for 3 minutes and naturally released it for 6 minutes. To this I added a can of rinsed black beans, can of green chilis, the chicken, 1tsp chili powder, 1/2 tsp cumin. Mixed it together in the Instant Pot and then stuffed my flour tortillas (sorry I can’t stand corn tortillas…horrible heart burn, horrible). Placed them seam side down and baked them for 20 minutes in the oven. After I pulled them out I had some quesadilla cheese and put that on top with some salsa and sour cream. This was such a delicious and easy meal. The family ate it all up and loved it. There ended up being I think 8 or 9 enchiladas and only 2 were left over. They were gone!
The last thing I did was to make the chicken bone broth in the Instant Pot. You can see that recipe here. It is a wonderful addition and will help me make other meals quickly in the near future. I love getting the most use out of my money I spent. Getting 3 meals and 4 full jars of broth from one Sam’s rotisserie chicken is a lot of meals for $5. So if you’re considering getting one but have no idea what to do with it this is how we used the leftover chicken. Nothing went to waste.
Matter of fact we even used the container. We are saving it to start our seeds in it so we have some yummy tomatoes without having to wait until summer. Using the container will have a terrarium effect and help our seeds get started even faster. I’m so ready for summer tomatoes. Or Maybe tomatoes in May because they are ready to go because we started them early.
