Crock Pot BBQ Chicken and Potatoes Recipe

Now I know it’s still summer, but it’s almost the start of the “Ber” months, so I’m already thinking of hot and filling dinners for fall time. Crock pot meals have to be one of my favorite kitchen tools to use through the colder months. Something about letting it cook all day so your house smells amazing and warm by dinner time is so comforting. Plus, having dinner done at the end of the work day without having to actually make anything when you are tired and just wanna eat is always a plus. This crock pot bbq chicken and potatoes recipe is one of my personal favorites. It’s super filling and full of flavor, and it only takes a few minutes to prepare. So I wanted to share this family favorite with ya’ll! Let’s check it out!

Crock Pot BBQ Chicken and Potatoes Recipe

You Will Need:

  • 2 lbs boneless, skinless chicken breast 
  • 1 lb potatoes 
  • 1 red onion
  • olive oil
  • 1 bag shredded cheese
  • 1 bottle bbq sauce of your choice (I used a honey bbq)
  • Seasonings of your choice for chicken (I used salt, pepper, Garlic lovers from Flavor God, and a little cayenne) 
  • Green onion (optional) 

Instructions for making my crock pot bbq chicken and potatoes:

Step 1: Grab your potatoes and chop into small cubes (I used about 3 large potatoes) season with salt and pepper and put into the bottom of your crock pot.

Step 2: Now it’s time to chop your onion. Also into small pieces, place into your crock pot. 

Step 3: Coat your onions and potatoes with a little bit of olive oil. You only need about a tablespoon or so. toss to make sure they are coated well.

Step 4: Now it’s time to prepare our chicken. You will want to cut your boneless skinless chicken breast into bite size chunks and season well with the seasoning of your choice. Place your chicken in the crock pot with your potatoes and onion.

Step 5: Now that you have all of your ingredients so far into your crock pot it’s time to top with your bottle of chosen bbq sauce and toss everything well to combine. Cook on high for 4 hours, or low for 6 hours. Make sure your chicken reaches an internal temperature of 165 degrees F.

Step 6: Once your chicken is done, it’s time to add your shredded cheese and green onions. Now, I love me some cheese so I used the entire bag, but you can use as much or as little as you want! Once you have added it, put your crock pot lid back on and let it cook an additional 15 minutes, or until the cheese is melted.

And that’s it! A simple crock pot bbq chicken and potatoes recipe that is super easy to make, is filling, and also makes great leftovers (if there even is any haha!). I hope you like it as much as my family does!
