Creamy Rotisserie Chicken Bake

If there is one thing I love, it’s a super easy weeknight meal that takes minimal effort and minimal time. That’s exactly what this creamy rotisserie chicken bake is. It’s perfect for those nights where you are starving but also exhausted. You just gotta mix up a few ingredients and bake and you will have a hot delicious dinner for the whole family. It also makes for great leftovers which is always a plus. It’s got a really yummy buttery cracker crust that makes for a great texture balance with the creamy chicken. Let’s check out how to make it, it’s going to be so easy!

 Creamy Rotisserie Chicken Bake

You Will Need:

  • 4 oz cream cheese (I used whipped cream cheese, you can you blocked cream cheese if you would like, just make sure it’s softened
  • 8 oz sour cream
  • 1 cup crushed ritz crackers
  • 1/4 cup melted butter
  • 1 can cream of chicken soup
  • 1 packet (or 2 tbsp) ranch seasoning
  • 1 1/2 cup shredded cheddar cheese
  • 1 cup chopped cooked bacon 
  • 3 cups shredded rotisserie chicken
  • salt and pepper to taste

Directions for making my Creamy Rotisserie Chicken Bake:

Step 1: Mix together your sour cream and cream cheese until well combined, add in your ranch seasoning mix and salt and pepper. 

Step 2: Add in your shredded chicken, bacon, and shredded cheese, Mix well to combine. 

Step 3: Add in your cream of chicken soup and mix well. 

Step 4: Preheat your oven to 350 degrees F. Spread your chicken mixture into a baking dish

Step 5: Crush up your ritz crackers in a ziplock bag and pour in your melted butter, shake bag to combine and make sure it is coated evenly in the butter.

Step 5: Spread your cracker topping on top of the chicken mixture evenly. 

Step 6: Bake at 350 degrees F for about 30-40 minutes until bubbly and your top is golden brown. Serve hot! 

And that’s it! It should only take you about 10 minutes to put together and 30-40 minutes in the oven and you will have a hot and filling dinner for the whole family. It’s always a favorite for everyone eating it, and it’s a favorite of mine as the one cooking it because it’s super easy and quick!
