Summer time is finally here! And you know what that means? It means it’s hot..and all the bugs are back. Ok ok, I’ll confess, I’m not the biggest summer fan. I very much love cooler weather, fall and early winter being my favorite. But if there is one thing I do love about summer, it’s grilled food. I love the flavor of anything that has been char grilled. And bonus, you don’t heat your house up by turning on the oven! It’s a win/win in my book. My absolute favorite thing to cook on the grill is chicken. It’s just so versatile! And it’s great for meal prepping. You can grill up a ton of chicken on a Sunday and use it in different ways throughout the week. This weekend I made a family favorite, Bang Bang Chicken Skewers. It’s a little spicy, a little creamy, and packed with flavor. It’s great by itself, over rice, in a salad, or even in a wrap! It’s a super simple recipe that only takes about 20 minutes to make as well. So I thought I would kick off summer by sharing the recipe with my readers. Let’s check it out shall we?
Bang Bang Chicken Skewers Recipe
You Will Need:
- 2 pounds chicken breast
- Garlic powder
- onion powder
- cayenne pepper
- 2 tbsp sweet chili sauce
- 2 tbsp kewpie mayo
- salt and pepper
- red pepper flakes (optional)
Directions for making Bang Bang Chicken Skewers:
Step 1: Grab your chicken breast and dice them into bite sized chunks
Step 2: Season up your chicken! I always use garlic powder, onion powder, cayenne pepper, salt, pepper, and a little red pepper flakes for some extra heat. Seasoning is totally up to what you like! Just make sure you season all sides of the chicken well.
Step 3: Now it’s time to get the chicken on skewers. You’ll just arrange them however you like, but you do want the chicken close together, but don’t over crowd the skewer (I had one of mine snap because I tried to put a little too much chicken on it, ha!). If you are using wooden skewers make sure you soak them in water for at least 30 minutes to prevent charring!
Step 4: Throw them on the grill! Cooking times will vary, but my chicken took about 11 minutes in total. You will just want to make sure you check them with a meat thermometer. As long as they hit an internal temperature of 165 degrees F you are good to go!
Step 5: While your chicken is grilling, let’s go ahead and make our bang bang sauce. All you need to do is mix up your sweet chili sauce and your kewpie mayo (side note, if you can’t find kewpie mayo, you can use any kind of mayo in it’s place and it will still be good) together and that’s it! Easy right?
Step 6: Once you pull your chicken off the grill, you will be brushing your bang bang sauce on the chicken. You will want to do this while it’s still hot and make sure you coat all sides generously. Really slather it on there for the best taste.
Step 7: Serve with your favorite sides and enjoy your meal!
It really is that easy! It’s fantastic all by itself or with your favorite sides. Another way our family enjoys it is in a nice green salad with a ginger dressing. Bonus, it’s also good cold the next day!
