Guess whose back again with an easy weeknight dinner that is a hit with the whole family? That’s right, it’s me! Sometimes you just need to eat something that you don’t need silverware for and can be on the table in less than an hour. That was me last night when I made these Meatball Bombs. It had been a long day but I was starving. I didn’t want to make a big mess of the kitchen and I didn’t want to do a ton of dishes when I was done. This recipe only uses 1 pan and you don’t even need a fork to eat them! This is a great recipe for school nights, or on game days. It’s a super filling recipe, we didn’t even need sides for it, it was pretty much an all-in-one type of meal. A win/win if you ask me. Let’s check out how to make them shall we?
Easy Dinner Recipe: Meatball Bombs
You Will Need:
- 1 package meatballs (they usually come in 12 packs)
- 1 can biscuits
- Pizza Sauce
- Mozzarella cheese
- Melted Butter
- Garlic Powder
- Onion Powder
- Italian seasoning
Meatball Bombs Steps:
Step 1: Cook your meatballs according to package directions. Preheat your oven to 350 degrees F and line a baking sheet with foil.
Step 2: Take your can of biscuits out. You are going to split each biscuit in 1/2. Roll over your biscuit dough with a rolling pin a few times until they are about 4″ across.
Step 2: On each dough circle, you will place a cooked meatball, about 1 tbsp of pizza sauce, and a sprinkling of cheese.
Step 3: Once your meatball bombs are filled, you are going to pinch the sides together until you make a ball that is closed on both ends. Place your balls on your foil (I would recommend spraying your foil down with pam to keep them from sticking)
Step 4: Melt a few tbsps of butter, and add in some onion powder, garlic powder, and Italian seasonings. I don’t measure how much I put in, I just keep going until my southern ancestors whisper to tell me to stop, ha!
Step 5: Brush your melted butter and spice mix over each meatball bomb until covered. I also sprinkle a little extra cheese over the top.
Step 6: Bake at 350 for 18-20 minutes, or until your biscuits are nice and golden. Serve hot!
It’s as simple as that! 1 pan, about 1/2 an hour, and you have an easy, filling weeknight dinner that everyone is sure to love. You can customize them with different fillings and cheeses too, so everyone can have their favorite. It will for sure be a dinner in our rotation from now on!
