When it comes to making dinner, sometimes all I want is something hot, filling, and quick. It gets busy on weeknights around here but I’m trying to cut back on eating out, even if it’s hectic night. So I’m always on the lookout for easy (but still delicious) recipes to feed the family. One of my husbands favorite dinners to have is a classic chicken pot pie but I don’t always have the time, or energy to be honest, to make that on a consistent basis. So I got to thinking that there has to an easier way to make it right? Turns out, I was exactly right! Ya’ll I’m going to share the easiest chicken pot pie casserole recipe with you. It has all of the same great taste and comfort as a traditional recipe, but it takes 1/3 of the time to prep and make. Let’s check it out shall we?
The Easiest Chicken Pot Pie Casserole Recipe
You Will Need:
- 2 cans shredded chicken (you can also you shredded rotisserie chicken!)
- 2 cans cream of chicken soup
- 2 cans flaky biscuits (make sure you get the flaky kind, not the fluffy biscuits)
- 1 bag frozen mixed vegetables
- Garlic powder to taste
- onion powder to taste
- salt and pepper to taste
- Optional: for a little kick of heat I added some Not Your Mama’s seasoning
Steps for making the easiest Chicken Pot Pie Casserole recipe:
Step 1: Preheat your oven to 350 degrees F and grab a casserole dish
Step 2: Mix together your frozen veggies, chicken, cream of chicken soup, and seasonings until well combined.
Step 3: Take your canned biscuits and cut each one into fourths, layer on top of your mixed casserole filling.
Step 4: Put your casserole in the oven and bake at 350 degrees F for 30 minutes, or until bubbly. Serve hot.
That really is it! 4 easy steps and about 35 minutes and you will have a hot, delicious dinner ready for the family! It has all the best taste and filling of a traditional Chicken Pot Pie with so much less work! It’s quickly become a family favorite around here and I don’t even mind making it, ha!
