If there is one thing I love, it’s quick and easy weeknight dinner recipe. Like most working parents, I am BUSY so anything that can make my evening less stressful is a win in my book. I also always love finding recipes that are different than what we normally make. You gotta shake it up every now and then right? My family loves a good Frito pie, but we were looking for a new spin on the classic recipe, and when I realized we had some left overs from taco night, I knew what I had to do! Which is how I am bringing you this Quick and easy Mexican Frito pie recipe today! It’s got everything you love about a traditional Frito pie recipe, with a little Mexican kick to it. It was a huge hit with my family, and I bet it will be with yours too! Let’s check it out shall we?
Quick and Easy Mexican Frito Pie Recipe
Here is what you will need:
- 1 lb ground beef
- 1 pack taco seasoning
- 1 can refried beans
- 1 can Enchilada sauce
- 2 cups shredded Mexican cheese
- 1/2 cup sour cream
- 1 bag Frito corn chips
- Optional: Cayenne pepper
- Optional: toppings (olives, salsa, onions, etc)
Instructions for making my quick and easy Mexican Frito Pie recipe:
Step 1: Preheat your oven to 375 degrees F
Step 2: While your oven is preheating, let’s brown our ground beef. Once your beef is browned, drain your grease and add in your taco seasoning according to package directions.
Step 3: While your taco meat is still in the skillet, add in your can of refried beans and your sour cream. Mix well until all combined. Once combined, pour your can of enchilada sauce on top of your mix, and stir to combine.
Step 4: Grab a casserole dish, and add about 1/2 your bag of Frito corn chips to the bottom of the casserole dish. Then, pour your taco meat mixture on top. Optional: sprinkle a little cayenne pepper on top of your mixture for a little more kick of spice to your dish.
Step 5: Add the remainder of your bag on chips on top of that, and top with 2 cups of shredded Mexican cheese.
Step 6: Pop your Mexican Frito Pie into the oven at 375 degrees F for 15-20 minutes, or until cheese is nice and bubbly.
Step 7: Take your Mexican Frito Pie out of the oven and top with your toppings of choice and enjoy!
And that’s it! See? I told you it would be easy and quick! Only 2 pans to clean when you are done too. It also heats up super well, so it makes for a great left over meal (if you have any left that is, ha!). It’s super warm and flavorful, and great for a easy weeknight meal on a busy day. And you can top it so many different ways to make it your own.
