It’s the time of year when we have a lot going on as a family. We have fun fall outings, fall sports practice, school is back in full swing, etc. It gets busy around here! And I’ll admit it, we eat out way too much. So in an effort to curb some of our spending on fast food, I’ve been making sure to meal plan, and find meals that are quick and easy to make, but that everyone will still eat and enjoy. One thing our entire family can agree on is anything Mexican, and especially tacos! We are lovers of all types of tacos and we have them at least once a week. So I was thinking of ways we could switch up our normal taco routine, entire my easy and fun taco salad recipe! It takes less than 2o minutes to prepare, the kids will love it, and the prep and clean up is minimal. It really is a winning recipe all around. And of course, as with any salad recipe, it’s so easy to customize according to what your family likes! Let’s check it out.

Here is how to make my super easy and fun taco salad recipe:

You Will Need:

  • 1 lb hamburger meat
  • 1 packet taco seasoning
  • 1 bag shredded lettuce
  • 1 can rotel
  • 1 med onion (chopped)
  • 1 bag nacho cheese chips ( If you don’t like the nacho cheese you could just as easily use the cool ranch flavor, or just regular old tortilla chips!)
  • 2 cups Mexican shredded cheese
  • 1 bottle Catalina dressing
  • Optional toppings: sour cream, salsa, guacamole, etc

Instructions for making this Taco Salad Recipe:

Step 1: Brown your hamburger meat and drain your grease. Season with your taco seasoning according to package instructions. Set aside to cool.

Step 2: In a big bowl, add in your lettuce, rotel, chopped onion, Catalina dressing, and Mexican shredded cheese together and mix well to combine. If you are not planning on serving right away, go ahead and cover and place in the fridge until you are ready to serve.

Step 3: When you are ready to serve your salad, add in your hamburger meat and mix. Crush up your bag of nacho cheese chips and add to your salad. Toss to combine.

Step 4: Top with any toppings of your choice and serve!

See, I told you guys that it was going to be super easy and fun to make! And everyone is sure to love it. It’s nice a light, doesn’t take long, and is easy to eat quickly when you are in a hurry on a busy fall practice night. I hope you enjoy it as much as our family does!

Easy enough, and looks SO good! I would definitely top with loads of sour cream, maybe even more cheese!
