Fall is my absolute favorite time of the year. I will take a crisp October day over a hot day in July for sure. I love everything about the fall. I love the temperature, the changing colors of the leaves, all the spooky movies on TV, and of course, all things Halloween. But what is my favorite thing about the fall? PUMPKINS! All things pumpkin. Yes, some can call me “basic” all day long, but I’m still going to drink my pumpkin spice latte while at the pumpkin patch and I’m going to have a great time doing it. I spend a lot of time during the fall and holiday season in general baking different treats for friends and family, and you know I have a kick off the season with a fresh loaf of delicious pumpkin bread! It’s one of my go-to recipes because it’s super simple to make, is always a crowd favorite, and can be switched up in a few different ways once you have the base recipe. You can add in different spices, chocolate chips, nuts etc. You can even top with different frostings for a new flavor combination! After lots of trial and error I really think I have the perfect pumpkin bread recipe and I wanted to share it with my lovers of all things pumpkin! I hope you enjoy it as much as I do!
The Perfect Pumpkin Bread Recipe
Here is what you will need for this pumpkin bread recipe:
- 2 cups solid pack pumpkin
- 3 cups all purpose flour
- 2 cups sugar
- 1 cup canola oil
- 1 tsp salt
- 2 tsp vanilla extract
- 1 tsp baking soda
- 2 tsp cinnamon
- 2 tsp pumpkin pie spice
- 2 tsp baking powder
- 3 large eggs
Directions for making perfect pumpkin bread:
Step 1: Preheat your oven to 325. While your oven is preheating grab a medium sized bowl and mix together your oil, sugar, vanilla, eggs, and pumpkin. Once your ingredients are well combined, set your bowl aside.
Step 2: In another (slightly larger) bowl, mix together your dry ingredients (your salt, flour, baking powder, baking soda, cinnamon and pumpkin pie spice) .
Step 3: Now it’s time to mix your wet and dry ingredients together! Mix until well combined BUT do not over mix. Once the ingredients are mixed, stop. Don’t keep mixing!
Step 4: Spray some non-stick spray on 2 9×5 loaf pans and divide your batter evenly between your two loaf pans.
Step 5: Bake your pumpkin bread at 325 degrees for 45-50 minutes, or until a toothpick being inserted into the loaf comes out clean. Pull your loafs out and allow to cool for 10-15 minutes on a wire rack.
Step 6 (optional): Top however you would like! I like to frost one of my loves with a little cream cheese frosting, but my daughter loves topping hers with a little dusting of powdered sugar and extra pumpkin spice seasoning. On the flip side, my husband is just as happy to eat his plain! You can go wild, haha.
