I don’t know about you guys, but these summer temps are something else around here! Hitting a temp of over 100 degrees down here in Tennessee is not something I enjoy, ha! In the last week or so I’m looking for any snack and dinner ideas that don’t involve turning on the oven or stovetop. Bonus points if I can serve it cold, as that’s super refreshing when it’s so hot outside! So I did what I do with anything I possibly can, I turned it into a dip! Any kind of dip is my favorite snack any time of the year, but especially in the summer. And ya’ll, this super simple Mexican street corn dip recipe is seriously so easy and tastes fantastic. You can serve it with tortilla chips, corn chips, or even some fresh cut veggies.
