I don’t know about you guys, but these summer temps are something else around here! Hitting a temp of over 100 degrees down here in Tennessee is not something I enjoy, ha! In the last week or so I’m looking for any snack and dinner ideas that don’t involve turning on the oven or stovetop. Bonus points if I can serve it cold, as that’s super refreshing when it’s so hot outside! Mexican street corn is one of my families favorite snack, but it’s just been too hot for all that, so I thought how can I transform it to make it a great summer snack? So I did what I do with anything I possibly can, I turned it into a dip! Any kind of dip is my favorite snack any time of the year, but especially in the summer. And ya’ll, this super simple Mexican street corn dip recipe is seriously so easy and tastes fantastic. You can serve it with tortilla chips, corn chips, or even some fresh cut veggies. Here is how to make my Super Simple Mexican Street Corn Dip Recipe
You Will Need:
- 2 cans Mexican style corn (drained)
- 1 cup sour cream
- 1 cup mayo
- 1 can rotel dip
- 2 cups shredded Mexican cheese
- Optional: Cilantro (to taste)
- Optional: Cayenne pepper (to taste)
Now on to how to make this super simple Mexican Street Corn Dip Recipe:
Step 1: Add all of your ingredients to a large bowl. Season to taste.
Step 2: Mix well until all ingredients are combined.
Step 3: Cover your bowl and place in fridge for a few hours.
That’s IT you guys! 3 simple steps and maybe 5 minutes of prep time and you have a delicious dip that the whole family is sure to love. We love the way the flavors mesh with each other, and it’s just so refreshing on a hot day. It’s great by itself as a snack, or as a side dish next to some tacos. Your dip will be stay good for about a week in the fridge (but it never lasts that long in my house haha).
