If there are 2 things I love, it’s easy dinners, and twists on an old classic. No one wants to eat the same old thing week after week in the same way right!? So when I come across a new way to make an old favorite I am all over it. One of my husbands favorite easy meals has always been sloppy joes. They are cheap, easy to make, and a quick meal on busy nights. But let’s face it, first they are called sloppy for a reason, and they can get boring if you eat them too often. So today I’m going to share an awesome new way to enjoy the family favorite flavor of sloppy joes in a new way….Sloppy Joe Cups! I love that they are handheld and contain the mess a little better than the traditional sloppy joe meal. And they are just as easy to make! Let’s check them out.

Here’s how to make my super easy Sloppy Joe Cups:

You Will Need:

  • 1 lb hamburger meat
  • 1 can sloppy joe sauce
  • shredded cheese
  • 1 can Pillsbury cornbread swirls  (You can totally use regular biscuits, but the swirls are great because they are corn muffins which pairs well with the meat!)
  • Salt, pepper, and spices to taste
  • A muffin pan

Step 1: First preheat your oven to 375 degrees F. While your oven is preheating, go ahead and cook your meat and add in your sloppy joe sauce and seasoning.

Step 2: Grab your cornbread swirls and your muffin pan. I recommend spraying your muffin pan with oil to prevent it from sticking. Place one cornbread swirl in each muffin tin and press down until you have formed cup shapes.

Step 3: Add your sloppy joe mix to your cornbread swirls. You can add as much as you like, but adding more means you might have a little more of a mess (but more yummy sloppy joe haha)

Step 4: Top with cheese and bake at 375 degrees F for 14-16 minutes or until cornbread swirls are done and cheese is bubbly.

That’s it ya’ll! 4 easy steps, less than 1/2 an hour and you have a delicious new twist on a classic comfort food! It’s quickly become a new family favorite in my house, and I hope it does in your as well!

What side would you serve with your Sloppy Joe Cups? Let me know in the comments below!
