The high here in Tennessee was only 53 yesterday, the lowest it has been this season, which can only mean one thing…it’s officially soup season ya’ll! The start of soup season is always my favorite. Now normally I fire up the crock pot and go to town all day making my soups, but sometimes something comes up (most of the time that “something” is that I totally forgot to start the crock pot early enough ha!) and I am unable to use the crock pot in time for dinner that evening. Which used to be a total bummer, that is until the invention of the Instant Pot! My Instant Pot is one of my favorite tools for when I’m short on time but still want a homemade dinner.
That’s why when I’m in a rush but looking to make some soup I fire up my instant pot with the Easiest Instant Pot Loaded Potato Soup recipe! It’s creamy, it’s filling, it’s cheap, and most importantly, it’s fast! So I knew I had to share it with my readers who love all things carbs and cheese like I do. Let’s get started!
Here’s how to make the easiest instant pot loaded potato soup ever:
You Will Need:
- 1 bag frozen hashbrowns (the cubed, not shredded)
- 1 can cream of chicken soup
- 1 onion (peeled and chopped)
- 2 tsp garlic
- 2 packets ranch seasoning mix
- 1 block cream cheese
- 1 bag shredded cheddar cheese
- 1 (32 ounce) box chicken broth
- 1 package bacon bits
- Salt and Pepper to taste
- Optional: extra cheese and green onions for topping
Step 1: Add your onion and garlic to your Instant Pot and turn on your sauté option. Sauté until onions are translucent and fragrant. Make sure to stir frequently so you don’t scorch the garlic!
Step 2: Add your potatoes, your chicken broth, and your cream of chicken soup to your Instant Pot. Stir well and lock your lid. Cook on high pressure for 7 minutes. After cooking quick release your pressure.
Step 3: Give your soup a stir and add in your bacon, ranch seasoning mix, cream cheese (I cut mine into blocks for faster melting) and your shredded cheese. Mix well!
Step 4: Turn your Instant Pot back to your sauté option and cook your soup for another 5 minutes, or until your cheese has fully melted. Serve hot and topped with extra cheese, bacon, and green onions if you wish!
See? I told you all it was going to be the easiest instant pot loaded potato soup recipe didn’t I? You will have a delicious, hearty meal which will be so perfect after a long cold day! And it’s really great for those of us that made it half way through the work day before realizing you didn’t put dinner in the crock pot that morning, ha ha.
