Monster Christmas Cookie Bars Recipe
Christmas time is just around the corner and it’s my absolute favorite time of the year! I love the cold weather, I love the lights on my neighbors houses, and I love finding the perfect presents for my family and friends. But perhaps my favorite thing about the Christmas season is…baking! I love being in the kitchen whipping up delicious treats for gifts, cookie exchanges, or just to make someone smile.
This year I tried a brand new recipe which is my monster Christmas cookie bars! You guys, these things are amazing! Super chewy and decadent. And who doesn’t love a good reason to eat chocolate candies on anything right? Would you like to learn how to make my Monster Christmas Cookie Bars? Let’s go!
Here is how to make my delicious Monster Christmas Cookie Bars:
You Will Need:
Cookie ingredients
1/2 C unsalted sweet cream butter, softened
1/2 C sugar
1 C packed light brown sugar, packed
1 C creamy peanut butter
2 large eggs
1 tsp pure vanilla extract
1/2 tsp salt
1/2 tsp baking soda
2 C flour
1 c quick-cooking oats
1 C semi-sweet chocolate chips
1 1/2 C mint M&M’S candies
Cheesecake Ingredients
2 8 oz cream cheese, softened
1/2 C sugar
4 oz semi-sweet chocolate chips, melted
2 large eggs
Directions for making my Monster Christmas Cookie Bars:
Step 1: Preheat oven to 350°F and line your 9×13 baking dish with parchment paper.
Step 2: Using a standing mixer, beat the butter with sugars and peanut butter until creamy.
Step 3: Add eggs and vanilla, beat again until combined.
Step 4: In a large bowl, mix together in salt, baking soda, flour, and oats and mix until well combined.
Step 5: Gradually add into your wet ingredients
Step 6: Fold in 1/2 chocolate chips and 1 cup of M&M’S.
Step 7: Press half of the cookie dough into the bottom of the prepared baking dish and bake in the oven for 5 minutes. Set aside.
Step 8: Cheesecake filling:
1.In the standing mixer, beat cream cheese until soft and creamy.
2.Add in sugar and beat until smooth.
3.Add in melted chocolate and eggs and continue to mix until until eggs are fully incorporated,
4.Spread cheesecake over first layer of cookie dough.
Step 9: Top with remaining cookie dough and sprinkle the remaining 1/2 cup candy over the top.
Step 10: Bake for 35 minutes.
Step 11: Remove from oven and allow to cool to room temperature then refrigerate overnight
Cut into bars and enjoy with a glass of milk!
