Now I’m sure that most of you have broken out that slow cooker just in time for fall by now right? I don’t use my slow cooker a ton during spring or summer but as soon as the weather drops below 80 it’s slow cooker season in our house. Something about a hot meal cooking all day and filling up your house with the yummy smells of dinner cooking is so comforting during the colder months. Plus prepping everything in the morning when you have the energy to do so and just being able to grab and go in the evening is always a win/win in my book. One of my family’s favorite cold weather slow cooker meals is my slow cooker butter chicken recipe! It’s got tons of spice, without actually being spicy, and is so hearty and delicious. Plus, it makes for great leftovers so I always pack it as lunch the next day! It only takes just a few minutes to prep in the morning, and by the time everyone is home for dinner it’s already cooked and ready to go!

Ok y’all, now that you are hungry, let’s check out the list of ingredients you will need for this recipe, I love that a lot of them are pantry staples so you shouldn’t even have to buy that many new things for this slow cooker butter chicken recipe!
- 2 lbs boneless, skinless chicken breast
- 1/2 cup chicken broth
- 1 can (6 oz) tomato paste
- 2 tsp yellow curry powder
- 1 tsp marsala
- 1 tsp ground tumric
- 1 tsp salt
- 1 tsp pepper
- 3 cloves minced garlic
- 1/2 yellow onion (diced)
- 1 tbsp ginger
- 1/2 cup heavy cream
- 1 1/2 tbsp brown sugar
- 2 tbsp lime juice
- Rice of your choice (I used yellow rice, but you can use whatever is your favorite)
Now that you have gathered all of your ingredients, it’s time to get to work on this slow cooker butter chicken recipe:
Step 1: In a small bowl mix your tomato paste, spices, and chicken stock until well combined, set aside.
Step 2: In your slow cooker add your chicken, onion, garlic, ginger, and lime juice.
Step 3: Pour your spice mixture over your chicken to cover.
Step 4: Turn on your slow cooker and cook on LOW for 7-8 hours or HIGH for 4 hours
Step 5: Cook your rice according to package instructions
Step 6: This is an optional step, I like my butter chicken shredded, so before serving I shred my chicken with a fork. You don’t have to do this step if you would rather keep your chicken in chunks!
Step 7: Once your rice is done, scoop your chicken over your rice and serve hot!
