Easy Crock Pot Loaded Potato Soup Recipe

While the weather is still a bit chilly for a little longer outside I am taking full advantage of making all the soups I can make before the weather warms up. While I still enjoy a good bowl of soup regardless of the time of year, there is something about enjoying a hot bowl of soup on a cold night right? It just warms your bones up! Loaded potato soup is one of my personal favorite soups to eat. All that cheese and bacon gets me in a good mood every time.  And it’s SO easy to make. It’s something I can prep in the morning and by dinner time you have a perfectly delicious and creamy crock pot loaded potato soup that everyone is sure to love.

Here is what you will need to make my Easy Crock Pot Loaded Potato Soup Recipe: 

  • 2.5lbs russet potatoes 
  • 1 small onion (chopped) 
  • 2 cups chicken broth
  • 4 cloves of garlic 
  • 1 tsp salt
  • 1 tsp pepper
  • 8 oz cream cheese 
  • 4 oz shredded sharp cheddar cheese
  • 1.5 cups heavy cream 
  • 6 strips bacon (chopped) 
  • optional: green onions for garnish 

Cooking instructions:

Step 1: Cook bacon and drain, set to the side 

Step 2: Chop your potatoes into 2in chunks and roughly chop your onion. 

Step 3: Add your potatoes, onion, garlic, chicken broth, salt, and pepper into your crock pot and cook on LOW for 6-8 hours or HIGH for 4 hours. *You will know it’s ready when your potatoes become soft.

Step 4: When your potatoes are nice and soft add in your cream cheese, your shredded cheese, your bacon, and your heavy cream. 

Step 5: Using a potato masher, blend your soup together. The consistency depends on your own personal taste. If you like your soup a little more chunky, that’s cool! If you want it smooth, just mash it a little longer. 

Step 6: Top with your choice of toppings (My go to is always a little more cheese, some sour cream, and green onions) and serve along side some crispy french bread. 

How yummy and easy was that right? I use to always go out to get my loaded potato soup but now I can save money by making it at home that tastes just as good, if not better than what you can get at a restaurant. And it makes for great left overs.
