The Easiest Crock Pot Broccoli Cheese Soup Recipe
The weather is still pretty chilly outside, and you know what that means…it’s perfect soup recipe time! I can pretty much eat soup all year round but there is something about a nice hot bowl of soup when it’s below freezing outside that just warms my whole soul. I have recently been trying to get my kiddo to eat more vegetables in her diet (fellow parents, I know you all feel my struggle with that one right?) So I thought my crock pot broccoli cheese soup recipe would be the perfect way to get some extra veggies in that I knew she wouldn’t gripe about having to eat! The best part is that I can start it in the morning, and by dinner time the broccoli is perfectly soft and the cheese is creamy and delicious. I always make a big pot of it so that way we can take it to work the next day for lunch! (Which keeps my husband from eating McDonald’s for the 4th time that week, ha!)

- 1 bunch of fresh broccoli
- 1 onion (finely chopped)
- 2 cans cheese soup
- 1 can milk
- 1/2 stick of butter
- salt and pepper to taste
- optional: about a tsp chopped garlic
Steps for making the easiest crock pot broccoli cheese soup
Step 1: Chop your broccoli! How you chop your broccoli is completely up to you! I chop mine very finely so I have small pieces of broccoli that get perfectly soft. Some people prefer big chunks of broccoli in their soup. There is literally no way to mess this step up.
Step 2: Sauté your broccoli and chopped up onion on med until soft. You can add in your garlic if you choose to add it to your recipe. It gives it that little extra flavor!
Step 3: In your crock pot add you cheese soup, milk, and butter, once your veggies are soft add those into your pot.
Step 4: Give it a good stir and salt and pepper to taste. Cook on LOW for 3-4 hours.
Step 5: Serve it up with a little grated sharp cheddar cheese on top and a slice of toasted French bread for a perfect meal to eat while snuggled under a warm blanket with your family!
