Smothered Cheddar Bacon Chicken Recipe

If there is one thing I love most about cooking, it’s trying new recipes that are not only super simple to make, but also something delicious that my whole family will eat, even my picky teenager. Because lets face it, by the time dinner rolls around, most of us are tired and just looking for a good hot meal and to be able to put our feet up. That’s why this smothered cheddar bacon chicken recipe is SO perfect for those busy nights where you don’t want to spend tons of time in the kitchen. Plus, who doesn’t love any excuse to use bacon in pretty much any recipe you possibly can right? This recipe only uses a handful of ingredients, takes a few minutes of prep time and about 25 minutes in the oven and you are good to go! You ready to find out how easy it is to make? Let’s do it!

 

Here is how to make my Smothered Cheddar Bacon Chicken Recipe:

Here is what you will need to make my smothered cheddar bacon chicken recipe: 

  • 1-2 lbs boneless, skinless chicken breast
  • 1 pack of ranch seasoing
  • 1 cup mayonnaise
  • 6 strips bacon
  • 1 tsp garlic (minced) 
  • salt/pepper
  • optional: parsley 

Directions for making my Smothered Cheddar Bacon Chicken Recipe

Step 1: First you will want to preheat your oven to 450F. While your oven is preheating grab your mayo and your ranch seasoning and mix together well in a bowl. Set aside. 

Step 2: Cook your bacon according to package instructions. I chose to use microwave bacon because it’s faster, and I wouldn’t have to dirty any more dishes to make it! Once your bacon is cooked, drain off the grease and add to your food processer. Add your garlic and a little salt and pepper, grind until chopped finely. Pour out onto a plate. 

Step 3: Grab your chicken and pat dry. Line a baking sheet with foil. Dip your chicken into your mayo mix, coat well.

Step 4: After your chicken is well coated, now roll your chicken in your bacon mix, and place on your foil lined baking sheet. 

Step 5: After your have your chicken dipped and rolled, top with salt, pepper, and a liberal sprinkle of cheddar cheese. Pop your chicken into the oven and bake for 20-25 minutes or until the chicken is fully cooked through and your cheese is nice and bubbly. 

Step 6: Once you have pulled your chicken out of the oven, let cool and serve with whatever yummy side sounds good! 

That’s it! 6 simple steps and you have dinner done from beginning to end in about 45 minutes. And seriously ya’ll, the chicken is SO moist and cheesy, with that salty bacon. Not only did everyone finish their meal, my picky teenager actually asked for seconds, and she NEVER does that ha!
