One of my favorite things to do around the holidays and pretty much any other time of the year is baking! Making cakes, cookies, pies, or anything sweet for friends and family brings me such joy! But I will admit something to you all, The easier the recipe, the more excited I am about it. With a full time job, kids, and a house to maintain, I’m a big fan of any recipe that is simple to make, doesn’t give me too many dishes to do, and turns out delicious every time. This easy chocolate dipped peanut butter marshmallow cracker recipe is exactly all of these things. You only need a few ingredients, about 10 minutes of prep time, and some wax paper and you are good to go! These little delectable crackers are the perfect combination of sweet and salty in one little package. You can also top them with whatever sounds good, and use any flavor of chocolate you want!
These crackers are perfect for a movie night dessert, a cookie swap, or a just because you need something sweet type of day. You ready to learn how to make them? Let’s go!
Here is how to make my easy chocolate dipped peanut butter marshmallow cracker recipe:
You Will Need:
- Ritz Crackers
- Semi-Sweet chocolate chips
- Wax (or parchment) paper
- Peanut Butter
- Marshmallow Fluff
- Optional: Coconut Oil
- Optional: Sprinkles
Here are the steps to making my easy chocolate dipped peanut butter marshmallow crackers:
Step 1: Once you have gathered all of your materials, line a baking sheet with your wax paper, this will be your work area. Your next step is to assemble your crackers! for each piece you will be using 2 crackers. On one side you will use peanut butter on the other you will use marshmallow. Once you have both sides done, put them together and bam, you are good to go! Do this with as many sleeves of crackers you want to use!
Step 2: Next, you are going to want to melt your chocolate. There are a few ways you can do this, you can use a double broiler method or you can do it the easy way (which is always my choice, HA!) which is to just pop it in the microwave and give it a good stir. A note about either one of these methods, I personally add about a tbsp of coconut oil any time I’m melting chocolate. It keeps the chocolate smooth and shiny!
Step 3: Once you have your chocolate good and melted, it’s time to dip em! You will want to work sort of quickly depending on what type of melting chocolate you chose to use, as some of them solidify faster than others. It’s a simple process, you will drop your cracker sandwich into the chocolate, give it a flip, and Pick up with a fork. You will want to use a fork rather than a spoon because you will want some of that excess chocolate to drip off of your cracker before placing them on your wax paper. Once they are fully covered, but no longer dripping, go ahead and gently place them on your wax paper.
Step 4: Once you have all of your crackers covered in that chocolaty goodness, It’s time to decorate! Since it’s the holidays I decided to go with some festive sprinkles and some red sanding sugar. There are so many ways to spice these up. You can go with the classic sprinkles, some crushed up candy canes, nuts, dried fruits, etc. So many options to fit whatever flavor combination you like best.
Step 5: Your final step is to put your crackers into the fridge for about 15-20 minutes to allow the chocolate to set up and they will be ready to serve! These keep really well and look adorable on a christmas cookie plate, or wrapped up to give away to friends and family.
How yummy and delicious do these easy chocolate covered peanut butter marshmallow crackers look though!? I swear they are the perfect combination of flavors. A little salt, a little sweet, a lot of yummy. In my house the kids and adults loved them equally and I always get compliments on them when I bring them to cookie swaps. Little do they know, it’s one of the easiest recipes in my arsenal. I’ve also tried them with white chocolate, and let me tell you, they are just as good!
