Instant Pot / Weight Watchers
Jamaican jerk chicken stir fry
Serves: 4
Smart points: 2

Jamaican Jerk Chicken Stir Fry INGREDIENTS :

3 medium chicken breasts, boneless and skinless
1/2 head Cabbage
1 green Zucchini
1 red pepper
1 yellow pepper
1 onion, diced
1 tbsp. minced garlic
2 Tbsp. Olive oil
3 Tbsp. Jamaican Pickapeppa Sauce
3 Tbsp. soy sauce
2 Tbsp. Jerk seasoning
1/2 cup chicken broth
Jerk Seasoning:
2 tsp onion powder
2 tsp cayenne pepper
1 tsp paprika
1/2 tsp dried crushed red pepper
2 tsp dried thyme
1 tbsp garlic powder
2 tsp dried parsley
1/2 tsp black pepper
2 tsp salt
2 tsp sugar
1/4 tsp ground cinnamon
1/2 tsp ground nutmeg
1 tsp ground allspice

Directions:
Make your jerk seasoning.
Cut the chicken into thin strips about 1-inches long.
Season the chicken 2 tbsp. jerk seasoning in a sealed plastic bag.
Marinate the chicken in the refrigerator for 30 minutes.
While the chicken is marinating, cut up the cabbage cross-wise into thin
strips.
Cut up the red & yellow peppers and set aside.
Combine the Pickapeppa Sauce and soy sauce in a small bowl/
Set the Instant Pot to saute’ and add 2 tablespoons oil.
Add the minced garlic.
When the oil is ready, add the chicken and saute’ until it turns light
brown.


Add the 1/2 cup chicken broth, cabbage, peppers, zucchini, and onion. Turn the Instant pot vent
to seal.
Set to manual for 6 minutes.
Do a quick release.
Add the sauce in the entree.
Stir to combine.
Serve hot with rice.
ENJOY!!
