It may be becoming more Fall like. But the invites to barbecues are still coming here in Tennessee. We can have days in the low 90’s and days in the low 70’s. The weather just can’t make up it’s mind here. I love easy food to take to barbecues and this one is a winner for sure. Chipotle ranch pasta salad recipe
Chipotle Ranch Pasta Salad INGREDIENTS
1 cup sweet onion chopped
1 green bell pepper chopped
1 red bell pepper chopped
1 15 oz can black eyed peas drained and rinsed
1 15 oz can black beans drained and rinsed
1 15oz can or corn kernels drained and rinsed
1 cup tomatoes diced
2 large jalapeños diced and seeds removed
1 box elbow macaroni
1 cup od chipotle ranch salad dressing
INSTRUCTIONS
Cook the macaroni as directed
Place all the ingredients into a large bowl and stir to combine
