Here’s the list of simple ingredients you need for the Egg Roll in the Instant Pot meal.

Ingredients: 

3 bags of cole slaw

1 1lb ground pork

1 bag medium shrimp with tails off

1 stalk celery, chopped

1/2 onion, chopped

2 tsp low salt soy sauce

1 tbs terayaki sauce

1/4 tsp garlic powder

1 tsp olive oil or sesame oil

Add oil to instant pot and switch on to saute. Cook ground pork until no longer pink. Add celery, onion and cook for another minute or so. Then add 1/2 the cole slaw (1 and 1/2 bag), tereyaki sauce, soy sauce and garlic. Turn to pressure and cook for one minute (let it come to pressure then release the pressure). Open and add the shrimp. Let the shrimp cook just by stirring it into the cooked ground pork until the shrimp is completely pink. This takes about 3 minutes. Then add the last bit of cole slaw and stir together. Serve. Delicious and so good that you will pass on take out!

This was so good that it will totally replace us going out for chinese. Delicious and easy makes a great week night meal for me. Then add in that it’s low fat and low calorie and I’m one happy mom. Making sure these kids get fed is my number one job. Finding foods that are better for them than eating out makes it that much better! Put this one in your food rotation.
