My husband and I decided that we needed to make some changes in our life. We’re not eating as healthy as we should and we’re not getting our exercise in either! So I went looking for some healthy recipes and found one I wanted to share with you. Check out this spinach salad with chicken and avocado recipe. My entire family (parents and 3 kids) loved it!
First, gather your ingredients for Spinach Salad with Chicken and Avocado recipe!
Fresh spinach
Chicken breast (I grilled mine)
Roma tomatoes 2 chopped
avocado sliced into strips
sunflower seeds
light ranch dressing
How to make a delicious Spinach Salad with Chicken and Avocado recipe.
The first thing we did was grill our chicken breast. We cut our chicken breast up for the salads and left two whole chicken breasts to eat on during the week. We try to meal prep on the weekend if we can so we can grab easy lunches to go. We grilled over charcoal. So we start our charcoal about 20 minutes before we put the chicken on. Then we grill the chicken breast 6-7 minutes per side.
Then we put our salad together. We chopped our tomatoes, cut our avocado and grabbed our ranch and sunflower seeds.
And then we put it all together!
It was so delicious!
It’s so easy to throw a salad together on these hot summer nights. They’re my favorite way to not heat the house and to get a healthy meal. Look at how delicious this salad was!
