I love my Instant Pot. It’s made my cooking life so much easier. That’s why I’m bringing you all kinds of recipes for it. It makes delicious yummy food and it does it in such a way that I don’t have to stand over it and watch it. My favorite kitchen appliance is this one! So check out my delicious pork chops and brown rice recipe made in the instant pot.

Pork Chops and Brown Rice recipe for the Instant Pot
Ingredients:
Pork chops
Brown rice
salt, pepper, garlic granules to taste
broccoli
Brown Rice and Pork Chops Instant Pot Recipe
Add salt, pepper and garlic granules to taste on both sides of the pork chops. First I browned my pork chops in the Instant Pot on saute. I used 2 tbs of coconut oil. You want coconut oil because it’s got a higher smoke point and you need that when using the Instant Pot and saute feature. It also gives it such a delicious taste.
I added 2 cups of brown rice after the pork chops were browned (about 7 minutes for both sides). Then I added 2.5 cups of chicken broth (I make my own that’s why there’s a weird chicken salad container in my ingredients pic). I cooked it on high pressure for 30 minutes (make sure valve is closed) and then did a quick release. You have to do 30 minutes for brown rice if you use any other kind of rice it may not take as long for the rice to get done. I did my broccoli in my microwave because it would be cooked to death if I let it cook with the rice. It was so delicious. A meal I will be making again!

Looks great, but, did you pile the pork chops on top of the rice and cook, or, did you scoop out the rice, but the chops in and pile the rice on top of that? I would love to make your recipe!

I’m kind of sensitive to tastes. so I usually don’t use enough to other people. Probably a 1/2 tsp of salt, 1/8 tsp pepper and 1/2 tsp garlic! HTH.

These things are never as easy as they appear. I tried to follow the recipe as written. the recipe called for pork chops, so i got out two big thick pork chops with bones and then realized they didn’t fit in the instant pot. I have a six-quart IP. I took a closer look at the recipe pictures and saw that Dina was using boneless paper-thin cut pork. I was able to squish the meat in without overlapping but was worried that the rice would be mushy or the pork undone. i have an IP Ultra60 and it has the knob and I still can’t figure out how to adjust the time so it cooked for 35 mins. I used beef bone broth that i bought at the store. I added shredded carrot to the brown rice. The result was awesome! I used a meat thermometer to confirm the pork was done. The brown rice was perfectly done, nice and tender, not mushy or crunchy or sticky. I garnished the dish with chopped yellow peppers and vidalia onion. Next time i will cut the meat off the bone before I put the chops in the IP or i will use pork tenderloin that I can cut up in even size pieces (my grocery store doesn’t carry the small boneless chops and i don’t want to go to another store to find them). I will definitely try this again. Thank you for the recipe Dina.
