This is our absolute favorite meal that I make. It’s so easy to make. We went on vacation and we got home at 2pm and I immediately put this in the crockpot and it was ready to eat at 5! Slow Cooker Chicken Tortellini Soup Ingredients
1 28 oz can of crushed tomatoes
1 small box or large bag of frozen spinach (I use the larger one but it’s up to your tastes)
24 oz chicken broth
1 block neufchatel cheese cut into pieces
Buitoni cheese tortellini
1/2 package Italian dressing (dry)
3 chicken breasts (I let it cook from frozen in the crockpot while the soup is cooking, then take them out and cut them up)
salt and pepper to taste
1 tsp garlic powder
Slow Cooker Chicken Tortellini directions
I place the frozen chicken breast in the bottom of the slow cooker. Then I add the tomatoes, chicken broth, spinach, salt, pepper, garlic powder and neufchatel cheese into the crockpot. Then I let it cook on high for 2.5 hours. Pull lid off and stir. Cut up chicken and then add back to slow cooker. Add tortellini and cook on low for the last 30 minutes. Serve and eat. It’s so filling and delicious. It’s our go to meal for cold days, sad days, or just need a delicious dish days. It’s also great to take to friends who are sick or someone you need to make a meal for. It makes a lot and yet we still never have any left overs. Ha! You don’t think a family of 5 is a big family. But we are! What’s your go to comfort food that you make?
