Overnight ham and eggs breakfast in the slow cooker

It’s getting to be that busy time of year. The time of year when you want to have lots of food already made up and cooking while you’re gone to work, shopping or sleeping. Why not make a yummy and delicious breakfast and utilize your slow cooker in the process. It’s a win for hungry tummies everywhere.

Are you looking for a delicious breakfast to make? One that’s easy and can be made in the slow cooker so you don’t have to do all the work that morning? Why not make my Slow Cooker Ham and Eggs and use that leftover ham from Thanksgiving? Here’s how easy it is to make! 

Slow Cooker Ham and Eggs breakfast Ingredients

I was feeding 7 people. So I used a lot of eggs. Can you tell?

15 eggs beaten with 1/3 cup of milk
1/2 chopped orange pepper
1/4 cup chopped onion (diced finely)
1/2 cream cheese bar (I used neufchatel) cubed
salt and pepper to taste

Here’s how to put your slow cooker breakfast eggs and ham together

Spray your slow cooker with cooking spray. Spray it well.  After beating the eggs with the milk I added the onions, cream cheese and peppers. Then add salt and pepper. Mix well in mixer or by hand. Then pour into Slow Cooker. I cooked mine on low for 30 minutes then dropped it back to low until morning. The next morning when I thought my crew was rising from their slumber, I turned it to high and cooked it for 30-40 minutes watching it closely.  My ham and egg mix when I got up was mostly cooked except the middle. So bumping it to high then cooked the middle too.
