Mexican Pasta Bake Ingredients
I used 1/2 lb black beans that I made from scratch because I didn’t want to go to the store. You can use 2 cans black beans
1 large can pinto beans
1 14 oz can crushed tomatoes
1 14 oz can diced tomatoes
1/2 chopped onion
1/2 chopped pepper (yellow)
1/2 bag eggless pasta noodles
4 oz mozzarella grated
2 tsp chili powder (to taste)
1 tsp cumin (to taste)
1/8 tsp cayanne pepper (or to taste)
Mexican Pasta Bake directions
In pan saute onion and peppers in water until translucent about 6-8 minutes. Add beans, crushed tomatoes, diced tomatoes, and all spices. Cook for 15 minutes then add noodles and cook 11 minutes more until noodles are done. Once everything is all cooked together use a slotted spoon and pull all ingredients out of pan (minus broth or juice left behind) and put in a glass bake pan that has been sprayed with cooking spray. Add cheese on top and bake in a 400* oven for 15 minutes until cheese is bubble and hot! Delicious! Serve after letting set for 5 minutes. This was a pretty big hit with my family so try it and see if your family loves it as much as mine did. You will eat a yummy meatless meal and save your family some money too. It’s got a lot of protein so it’s going to fill you up!
