I was trying to come up with a recipe idea for dinner. Aren’t I always? Aren’t you? Anywho I had a pork tenderloin that I needed to use so I reinvented a recipe I used to have and made it for the slow cooker! I call it Slow Cooker pork tenderloin with bacon and apricot sauce and it’s fabulous!
Here’s my Slow Cooker Pork Tenderloin with bacon and apricot sauce Recipe
Ingredients:
3 lb pork tenderloin (when I took mine out of the package it ended up being two)
bacon 6 slices
garlic powder sprinkled on pork and salt and pepper
apricot preserves
brown sugar
mustard
2 mandarin oranges zested, juiced (squeezed) and tossed in there
Directions:
Sear pork tenderloin in 2 tbs oil
Sprinkle garlic powder, salt and pepper to your liking on the pork. Sear it on both sides about 4 minutes each side. Pull out pork and put into slow cooker. Cook bacon in pan you seared pork in. Cook until crisp. Pull out and place over pork tenderloin.
Add 1/4 cup apricot preserves, 1/4 cup packed brown sugar, zest of squeeze the juice out of the oranges and toss in. Turns out my kids didn’t like the mandarin oranges or zest. So when I make it again I’ll do it without. Add 1 tbs mustard and mix together.
You should smell this deliciousness.
Cover the top of the pork tenderloin in the slow cooker. Let cook on low for 4-5 hours. Eat with mashed potatoes or whatever suits your fancy. This was so delicious. You have to try it. Yes there’s a few extra steps but it’s so worth it! If you work just do it the night before and put in fridge in your crockpot so you can pull it out and start it before you go to work!
