I have a new favorite appliance in my kitchen. It’s a mom’s best friend really. I’m not even kidding. It’s called an Instant Pot. It is a slow cooker, rice cooker, yogurt maker, dinner time making my life easier machine! I make meals in it about 3 nights per week and usually one lunch per week too. It’s amazing! One of the reasons I love it is that I don’t have to babysit my dinner when I make it. I put it in the pot and set it and walk away. Another reason I love it is that I can do almost everything in one pot. This pot is stainless steele so it holds up well to the dishwasher washing it multiple times per week. It’s made my life so much easier! I was searching for a recipe for chicken and found the angel chicken recipe. I of course adapted it to whatever I had on hand and made it. It was delicious! Here’s my ingredients!
Angel Chicken Ingredients
I’m feeding a family of 5 so my portions might be big or small to you!
chicken thighs thawed (you can cook them frozen in the instant pot just adjust your cooking time add about 4 minutes)
cream of celery soup
neufchatel cream cheese 1 package
dry ranch dressing 1/2 packet
dry white wine (pinot grigio) 1/2 cup
Instructions for Angel Chicken in your Instant Pot or Electronic Pressure Cooker
Add your trivet to the instant pot. Then add your chicken to sit on the trivet. To that add all the other ingredients and one soup can of water. Cook on the poultry function for 13 minutes and let it release naturally for at least 15 minutes. While this is naturally releasing you can cook your pasta on the stove. I used penne whole wheat pasta. After the pressure has released open the lid and stir well. If it’s too thin you can add corn starch to it and whisk it to thicken it up and make a lovely sauce. You can make this in the slow cooker if you don’t have an Instant Pot. Just add all ingredients and cook on low for 4-5 hours or high for 2-3 hours. Then add your pasta you previously cooked and enjoy!
This is a delicious recipe that you will make over and over again. It’s so simple to make and so delicious to eat. I love my instant pot. If you’re thinking about getting one here’s the one I got. I just got an Insta Pot! This recipe looks easy, and I like how fast it cooks up. I havent used mine yet, and I have had it a week. Its like it is mocking me right now and I see all kinds of terrific recipes!
