My kids were fighting the other day and I told them if they didn’t straighten up I wasn’t making smothered chicken burritos for dinner! They straightened right up! ha! Check out how easy and yummy it is to make the smothered chicken burritos in the slow cooker!
Ingredients for Smothered Chicken Burritos
2 cups rice cook according to package directions
1/2 jar salsa
2 cans reduced sodium black beans (rinsed)
1 can rotel
1 package neufchatel cream cheese
3 chicken breasts (mine I had cooked previously you can do the same or use a large can of chicken or 3 frozen chicken breasts)

Cheddar Cheese
Combine all ingredients, except cheddar cheese and rice, into the slow cooker. Let cook on low 4-6 hours. I did 4 but my chicken was already cooked. You would probably need 6 hours if it’s frozen. One hour before your slow cooker is finished cook your rice according to package directions. I cooked mine in my instant pot which is my new favorite friend.
We ran to a bowling tournament and came home exhausted from our day. Normally you would fill the tortillas, fold them up and put them in a baking dish, add more sauce from the slow cooker to the tops of the burritos. Then cook on 325* for 20 minutes or until cheese added to the top is melted and bubbly. However, we were all tired and hungry. So I added the sauce and meat and rice to the tortilla and shredded cheese on top and ate it right then and there. They were delicious. We eat at a local burrito place in town and these tasted as good as the ones they serve there! So yummy!
