It’s almost Thanksgiving! My favorite holiday of the year. I love that we get together with family and celebrate just being family. I was looking for a fun new recipe to make this Thanksgiving. I found stuffing muffins and thought, Genius! I must make that. It’s individually premade stuffing! You can walk around and hold it in your hand like cornbread and just eat it standing up. Probably shouldn’t but you could! Why not! Check out my stuffing muffins recipe and make them for your family this Thanksgiving.
Stuffing Muffins Recipe Ingredients
3 cups (easy cornbread recipe) crumbled. I usually make mine up the day before. Make two (one for dinner that night and one for the stuffing the next day).
2 TBS butter
1/2 cup chopped onion
1/2 cup chopped celery with leaves
1/2 cup chopped carrots
1 cup chicken broth
2 eggs
1 tsp poultry seasoning
1/2 tsp sage
1/8 tsp black powder
cooking spray
Stuffing Muffins Recipe directions
Crumble cornbread. Add spices and eggs and mix together. Cook carrots in chicken broth until almost done (about 10 minutes). Then add onion and celery and cook another 5 minutes until translucent. Let cool. Then add melted butter, carrots, onion and celery to cornbread mix and thoroughly mix together using your hands. Mold into balls and put into muffin tins. This makes approximately 24 muffins. Bake on 375* for 35 minutes.
