Check out my Buffalo Chicken casserole recipe. My friend Cyndi’s family shared this recipe with me. When I had it over at their house I wanted to eat like four plates. This recipe makes a lot for a big family or you can be like Perdue and then donate it to someone you know that needs a meal. Be like Perdue Donate meals!
Buffalo Chicken Casserole recipe
1/2 cup bread crumbs
1.5 lbs Perdue fresh chicken boneless skinless chunked
1/3 cup buffalo sauce
1 cup ranch dressing
1 can cream of celery soup
5 cups grated potatoes or hash browns
1/2 cup grated cheese
Heat oven to 350*. Spray 2 baking dishes with baking spray or butter the dishes.
Grate potatoes, lay on paper towel and pat to dry (skip if using hash browns)
In a bowl stir together chicken and buffalo sauce. Spoon into dishes in a single layer.
In the same bowl stir together everything else except the bread crumbs. Mix together well.
Then place in dish and sprinkle bread crumbs over the top. Cover with foil and bake 30 minutes. Then uncover and bake for 20-25 minutes more. I usually broil the top after for a couple minutes until golden brown.
