I am always looking for a quick and easy meal to get on the dinner table that is still healthy. Last night I tried the Old El Paso Fajita kit from their Publix Flavor Excursion sale and it was both quick and easy. Check out how I made them!
Here’s my ingredients:
Chicken breast (I used 3 for a family of five) Cut into thin slivers so it cooks quickly.
3 colorful peppers
1 onion
Old El Paso Fajita kit
I had rotel that I thought to add. But promptly forgot. They would add great flavor though. Am I the only one that does that?
Kraft Natural Shredded Cheese from their Publix Flavor Excursion if desired.
I thinly sliced my peppers and onion and added them to my heated cast iron skillet (can use another kind I just like the flavor the cast iron gives the chicken) with a tablespoon of oil. I quickly cooked the peppers and onions for five minutes stirring every minute or so.
Then I took the onions and peppers out of the pan and cooked the chicken and one tbs of oil quickly on med high heat for 5-7 minutes or until cooked thoroughly with no pink showing inside.
Add the onions and peppers back to the chicken and add the Old El Paso seasoning to the pan. Thoroughly coat and cook another 3-5 minutes.
Grab your flour tortillas out of the Old El Paso box and heat in microwave for 60 seconds. I wet my tortillas with a tsp of water to keep them from drying out. Then scoop out the chicken and peppers and finish your fajitas with the fajita sauce in the Old El Paso box. I thought these were delicious. Just 3 breasts and the veggies and the box fed my family of 5 with no problem. I did have to add more flour tortillas to finish them off for breakfast and lunch today. So I had enough to have 10 fajitas and about 5 more with more tortillas.

Mmmmm. Yummm! Those look so good. I haven’t had chicken fajitas in quite awhile. I think adding them to our menu plan for next week sounds PERFECT to me! I’ll surprise the hubby!

Fajitas are one of our main staples in our house. They are quick and easy to make too. I usually use the precooked fajita chicken. I should try to make my own meat next time.
