
How to Make Italian Roasted Vegetable Packets (The Easy Way!)
If you’re anything like me, you’re constantly juggling grocery runs, meal planning, and trying to get your kids to eat more veggies. One of my favorite go-to sides that checks all the boxes—easy, flavorful, and family-approved—is these Italian Roasted Vegetable Packets.
They’re customizable, come together in minutes, and roast up beautifully in the oven. Whether you’re cooking for a weeknight dinner or hosting a casual cookout, these foil veggie packs make a perfect side dish.

🛒 Ingredients You’ll Need:
This is a “choose-your-own-adventure” type of recipe. Feel free to swap in your favorite vegetables.

1 zucchini

1 yellow squash

1 red or yellow bell pepper

1/2 large onion
-
1 small broccoli crown
-
1–2 small potatoes
-
3 tablespoons olive oil
-
1/2 packet dry Italian dressing mix (adjust to taste)

Foil for wrapping
🔪 Instructions: How to Make Italian Roasted Vegetables
1. Preheat and Prep
Preheat your oven to 400°F (200°C). Line a baking sheet with foil or prepare individual foil packets.
2. Chop the Veggies
Wash and chop all vegetables into bite-sized pieces.
3. Season and Toss
Add the chopped veggies to a large bowl or place directly onto foil. Drizzle with olive oil and sprinkle with half a packet of dry Italian dressing mix. Toss to coat evenly.
4. Wrap and Roast
Wrap the veggies in foil to make packets, sealing the edges tightly. Place packets on the baking sheet and roast for 40 minutes, or until vegetables are fork-tender.
5. Serve and Enjoy
Carefully open the packets (watch for steam!) and serve warm. These go great with grilled chicken, steak, or even as a standalone vegetarian dish.
My Italian Roasted Vegetables Packet Recipe in pictures!

Select the vegetables you want to use. I used zucchini, yellow squash, peppers, onion, broccoli crown and potatoes.

Cut up the vegetables.

Add to foil and add 3 tbs olive oil and 1/2 packet Italian dressing (dry). Add more or less of the seasoning to your tastes. Roast on 400* for 40 minutes or until fork stuck into vegetables reveals they’re soft and ready to eat.
And Voila! The finished yummy product!
