Creamy Bacon POTATO SALAD
Summer time means so many days spending time outside. We swim at the lake, fish, kayak and just enjoy being outside. If we go to the lake a lot of the time we love to go ahead and grill out while we’re there. Why not make and take a yummy creamy bacon potato salad to your BBQ’s? It’s so delicious and a great new twist on an old favorite. It would be perfect around this 4th of July! Check out my creamy bacon potato salad recipe and let me know what you think!
Creamy Bacon Potato Salad INGREDIENTS:
9 Red skin potatoes…..4 with skin….5 without skin
1 3/4 C sour cream
2 TBSP fresh dill
1/2 lemon, juiced
4 pieces of crispy bacon
1/4 C Ranch Seasoning
How to make your Creamy Bacon Potato Salad DIRECTIONS:
-Peel 5 potatoes…. leave 4 with skin on….. dice and boil all 9 potatoes 10-15 minutes
or until fork tender. Pour out water then take the potatoes out of pot
and put in bowl.
-Cook bacon until crisp. Allow crispy bacon to cool… chop and crumble in small pieces.
-Add sour cream, fresh lemon juice, ranch seasoning, and bacon bits into
a bowl and mix well.
-Pour dressing over the potatoes….. stir well… while stirring the
dressing with the potatoes some will mash on their own due to being so
tender.
-Chop the fresh dill and stir into the potato salad.
-Cover the potato salad…. put in the refrigerator. Chill salad and
keep it overnight in the fridge because the flavor increases. Mmmm, Mmmm, Good! Doesn’t that look yummy?
