cranberry muffins recipe

We love muffins at our house. I wanted to find a way to make them healthy. So I decided to cut sugar and add the protein powder. They were so yummy and full of flavor. You have got to try this recipe.

cranberry orange muffins with protein powder

Cranberry Orange Muffins

Ingredients:
1 cup dried cranberries
1 cup orange juice
1/4 cup vegetable oil
2 cups whole wheat flour
2 eggs
1 scoop Purely Inspired Protein Powder
1 tsp baking soda
pinch salt
1 tsp microplaned (grated) orange rind (do not get the white of the orange rind

cranberry muffins ready to bake

Mix flour, protein powder, baking soda, salt together until mixed. Add orange juice, oil, egg and rind together and stir this well. Mix wet and dry together until just combined. Add cranberries. Stir until mixed. Spray muffin tin. Put 1/8 to 1/4 cup of batter into each muffin tin. Bake on 400* for 15-20 minutes.

These are such a yummy breakfast treat with less sugar and more fiber.

These are not very sweet. Just a hint of sweetness. If you need them sweeter add 3/4 c of sugar to dry ingredients. Does your family enjoy muffins? What’s your favorite muffin to make for or with your family? Leave me a comment and share your recipe with me if you’d like! Before you go checkout my protein breakfast cookie recipe.

Hmm, I never thought of adding protein powder to muffins! I wonder how the recipe would turn out if I doubled the protein powder amount, to get even more protein? Thanks for the recipe!

I’m not sure. If you do that you might need to add more liquid. Have fun, experiment and enjoy!

Yum. I love cranberry and orange so I would love to make these. I’ve never really baked with orange anything though, so I wonder if I would mess these up! They look and sound delicious.. I will have to give them a try, I know my kids would love these too! They sound like they’d be the perfect morning muffin for my busy household!

I wish I was a baker – I am not. I find it so much easier to just buy muffins. These sound so delicious and healthy though. I used to try to bake, but I simply burn everything – I can’t seem to get the baking thing down.

Is the orange juice in the list of your ingredients the one from can or is it better to squeeze orange to get it fresh? Cranberries are great and I’m sure these muffins taste delicious. I like muffins that are not too sweet. Our family also likes muffins as much as we love cupcakes.

I would have never thought to substitute sugar for a protein powder. I need to check this out and try the recipe. I know my Grandmother would love to cut sugar out where she can, I would hope they are just as moist and delicious!

I love orange and I love cranberry, and together I bet these flavors are divine! This looks like an awesome way to add extra protein into your diet. I would have never thought about adding protein powder to muffins. My husband has been concentrating on eating more protein, and I wonder if he’d enjoy these for breakfast.

Say whaaat! I would’ve never thought to put protein powder in my home made muffin mix. But it definitely gives you a boost especially after a workout, or even just after waking up. Smart move, because boy they look really delicious. I kinda want a bite. Or just make them myself 😉

This is the second time that I’ve seen a recipe using protein powder. I am curious and I would love to try that. I am trying to lose weight and hopefully, this will make me full for a longer period.
