Mexican Street Corn Recipe
Looking for a yummy meal to throw on the grill this Cinco De Mayo? (Or any other time you are craving a yummy Mexican treat!) Well then I have the perfect side dish or snack for you. Have you ever had Mexican Street Corn? I had it for the first time while at a festival in Dallas and oh my gosh you guys, that stuff was amazing. So I knew I had to make some at home! So this weekend I fired up the grill and tried to make some myself, and they turned out great! Even my picky 6 year old tried and loved it. Best part, it’s super easy to make! Let’s check it out:
Here is how to make this Mexican Street Corn Recipe:
You Will Need:
- 4 Ears of Corn
- 1 Cup Mayo
- 2 Tsp Paprika
- 1 Tsp Minced Garlic
- 1 Tsp Cilantro
- Pepperjack Cheese
First, in a bowl mix together your mayo, paprika, cilantro, and garlic until blended.
Next, lay out some aluminum foil and shuck your corn. Coat your corn with the sauce you made and top with shredded pepperjack cheese. (Yum right!?)
Then, Wrap your corn up and throw it on the grill! We grilled our corn for about 10 minutes, making sure to flip often. If you wanted a better char on your corn you could grill it longer, just keep an eye on it.
This was one of my daughters favorite thing we’ve made on the grill and that is saying something because she is a picky eater! One of the best things about this Mexican Street Corn Recipe is that it goes well with so many different things! You can have it with tacos, burgers, salads, or even as a snack by itself.
