My love of coconut cake is endless. I never really liked it as a child. As an adult I can’t seem to get enough of it. This is a simple cake recipe with a simple icing that tastes like a million dollars.
Make cake according to directions on box. I substituted coconut milk for water.

Ingredients
- yellow or white box cake mix
- coconut milk
- coconut
- sour cream
- whipped topping
- 2 c sugar
Instructions
- Make the cake according to box directions. I added coconut milk instead of water. So you can substitute that out if you have it. Cook in 2 8" pans following box instructions. Cool for 10 minutes then pull out of pan and let cool completely.
- Mix 2 cups sour cream with 2 cups sugar. Fold in 1 and 1/2 cups whipped topping and 1 c coconut. Use this to ice cake. Sprinkle extra coconut on top. Eat up! Delicious!

it says 1 cup of sugar, but recipe for icing calls for 2 cups..?????

I apologize and fixed it! It’s 2 cups for icing for sure! 🙂
