When the summer heat hits hard here in the South, the last thing I want is to turn on the oven and warm up the house even more. That’s why this easy pasta salad recipe has become one of my favorite last-minute dinners—and a go-to when I’ve forgotten to defrost something (which happens more than I’d like to admit!).

Pasta salad is not only quick to prepare, but it’s also light, refreshing, and super versatile—perfect for picky eaters or large family gatherings. Plus, it doesn’t require any fancy ingredients, and you can make it your own by adding what you have on hand.

As a mom of three and a longtime home cook, I love sharing budget-friendly, time-saving meals that still bring everyone to the table with smiles. This recipe checks all the boxes—and it’s even easier than a boxed mix!

Easy Pasta Salad recipe with items you already have in your fridge

This is a one pot meal that is just made for summer. Take this to a potluck or just have it for dinner on your back patio.

Ingredients Equipment Method

Ingredients
  

  • 1 whole cucumber cut up into half slices
  • 8 cherry tomatoes halved
  • 2 carrots shredded
  • 1 rope of polish sausage browned

Equipment

  • 1 pot to boil the noodles
  • 1 bowl to build the pasta salad in
  • 1 strainer (colander)
  • 1 spoon to mix

Method
 

  1. Brown your polish sausage after cutting them in half and into bite size pieces. Now I just boiled mine with the pasta (and that's a great way to make it one pot) But you miss the flavor of browning it in a skillet. So you choose which way you want to make it.
  2. cut all your veggies and shred the carrots
  3. Boil your pasta water and cook pasta of choice according to package directions
  4. pour off pasta water and rinse with cold water
  5. combine all into a bowl. Then let the people add their own favorite salad dressing to make it individualized to them.

🛠 Pro Tips for Making It Your Own

The best part about pasta salad? You can build it to fit your family’s taste. I recommend prepping all toppings in separate bowls so everyone can create their own version. Here are some of our favorite add-ins:

🍴 Optional Add-Ons:

  • Black or green olives
  • Hard-boiled eggs for protein
  • Jalapeños (seeded for less heat)
  • Banana peppers for tang
  • Crumbled feta cheese
  • Roasted or raw zucchini or squash
  • Bell peppers (any color)

🥄 Our Secret to Better Flavor

One thing we’ve learned over the years: Don’t add the dressing until serving. Letting the salad sit too long with dressing causes it to absorb and lose that fresh, tangy flavor. Plus, adding it at the table lets everyone control how much dressing they want—great for anyone watching calories or fat.

    Cool recipe! I like how you cooked the sausage along with the pasta, it’s easier and probably tastier. I keep my pasta salad simple, with canned corn and peas, some cubed cheese, and cherry tomatoes if they’re around. And mayonnaise for the dressing 🙂
