I got my coupons in and headed out to find the Old El Paso dinners for two. I chose the chicken enchiladas. Raced home to make them for the family. I bought 2 boxes so the whole family could eat it. I don’t typically buy fast food like this. I tend to make most of my own meals. But there’s two nights a week it’s hard to get dinner on the table so I was excited to not have to think about dinner on that night. My husband actually made this because he got home earlier then I did. Here’s what our dinner looked like.
Look at how yummy that dinner looked. The left is the dinner in the pan. You put the pan in the oven and cook away. The right is our plate of food. Yummo. And here’s what the family thought of the Old El Paso Chicken Enchiladas. On first bite everyone was very pleased. We enjoyed the dinner. The kids enjoyed the dinner. What we remembered too late? We do not like corn tortillas. These are in almost all enchiladas. I know it’s weird that the whole family doesn’t like corn tortillas but we really do not care for them at all. They taste good going down but not when they revisit you later. Oh well. The food itself tasted good. My hubby made spanish rice and refried beans to go with it. Yummo. So the moral of this story is to remember what it is that you do and do not like. lol We don’t eat enchiladas a lot. That’s why I was excited to try them at home. So give them a try! But remember what you do or do not like! They make other meals too. They make chicken fajitas, quesidillas and enchiladas for you to eat when you need a meal fast.
