Copycat Zuppa Toscana Soup Recipe from Olive Garden

My friend Tracy told me about this recipe and it sounded so good I had to try it out. Well it was a huge hit with the family. I made a lot of soup and there was one bowl left over. When my family pigs out I know it’s good. Check out the recipe and make it yourself. You’ll be so happy you did.

A super flavorful soup made with kale, potatoes, sausage yumminess!

Ingredients
  1. 1 lb polish sausage
  2. 6 large red potatoes, washed, chunked
  3. 1 onion diced
  4. 3 garlic cloves minced
  5. 2 cups kale chopped
  6. 2 cans chicken broth (or like me homemade)
  7. 1 quart water
  8. 1/2 cup milk
  9. 1/3 cup sour cream
Instructions
  1. Chop sausage into smaller pieces and cook in pan with onions and garlic. Add chicken broth and water to pot and stir. Place potatoes, in and cook on medium heat until potatoes are done. Add kale and cook for another 10 minutes. Add sour cream and then serve.

    Oh yes! My son made this a while back ago.. Sadly he was not home when he made so we did not get any but this is his fav OG soup and he said he loved it!

    This would be great during these still cold nights. Nothing like a warm bowl of zuppa soup to warm up with in front of the fire place. This doesn’t sound too hard. I love copycat recipes, thanks for sharing.

    I love it when you can re-create your favorite restaurant recipes at home. You can also put your own twist of taste on it – making it more/less spicy or salty depending upon your personal taste.

    This has always been my favorite OG soup. I worked out a recipe a few years back and loved making it at home. Unfortunately I’m the only person in my family who likes it so I don’t make it as often as I used to.
