Copycat Zuppa Toscana Soup Recipe from Olive Garden
My friend Tracy told me about this recipe and it sounded so good I had to try it out. Well it was a huge hit with the family. I made a lot of soup and there was one bowl left over. When my family pigs out I know it’s good. Check out the recipe and make it yourself. You’ll be so happy you did.

A super flavorful soup made with kale, potatoes, sausage yumminess!

Ingredients
- 1 lb polish sausage
- 6 large red potatoes, washed, chunked
- 1 onion diced
- 3 garlic cloves minced
- 2 cups kale chopped
- 2 cans chicken broth (or like me homemade)
- 1 quart water
- 1/2 cup milk
- 1/3 cup sour cream
Instructions
- Chop sausage into smaller pieces and cook in pan with onions and garlic. Add chicken broth and water to pot and stir. Place potatoes, in and cook on medium heat until potatoes are done. Add kale and cook for another 10 minutes. Add sour cream and then serve.
