Irish Stew with cheddar bacon cornbread #recipe

irish stewYesterday I made a new stew. I wanted to try an Irish stew and wow it was good. Check out my recipe and make it for yourself. The beer gives the meat such a unique yummy flavor! The family loved it. Warning I don’t cook with a lot of salt and pepper so you may want to adjust for your family’s likes. And the recipe!

  1. 2 lbs beef stew meat cut into cubes
  2. 4 long carrots cut into 1 inch
  3. 6-8 big red potatoes peel on cut into chunks
  4. 1 white onion cut into chunks
  5. 3 cloves garlic minced or like I do with a grater
  6. 1 can tomato soup
  7. 1 bottle Yuengling Beer
  8. 1 cup cold water
  9. salt and pepper to taste
  1. I added the meat straight to the crock pot with out browning it. Then I added the vegetables, beer and the tomato soup and water. Cooked on low for 4 hours. Then set it to warm until we were ready to eat which was 2.5 hours later. It was so good! Try it!

  1. 3/4 c corn meal
  2. 1 1/4 c all purpose flour
  3. 1/4 c sugar
  4. 2 tsp baking powder
  5. 1/2 tsp salt
  6. 1 c milk
  7. 1 beaten egg
  8. 1/4 c oil
  9. 1/4 c cheddar cheese ( I used extra sharp)
  10. 3 slices of bacon cut up (could use more or less to your liking)
  1. Put dry ingredients in bowl and mix together. Add wet ingredients and stir just until mixed. Do not overstir. Spray your pan. Pour into your favorite pan (I used round 9" cake pan). Cook on 400* for 20-25 minutes or until a wooden toothpick inserted comes out clean. Let rest 5 minutes then cut and serve!
