Recipe for a "Vegetarian Tuna" Sandwich

I made this recipe today and it was so easy. I’m always trying to cut down on the meat we are eating.

I’m a semi vegetarian. lol Anyway I grabbed a can of garbanzo beans, rinsed them well, and used my potato masher to mash them up. I added about 2 tbs of reduced fat miracle whip, a tsp of dijon mustard and cut up some sweet pickles. Mixed it all up and added it to some great healthy bread for lunch today. Obviously it’s no tuna sandwich. But it was surprisingly good! What have you done to try to eat healthier?

    This is a great recipe! I'm vegetarian myself and am always looking for different combinations.A cilantro mint sauce with the garbanzos is divine.
