One night last week I was searching for something to do with the zucchini I had coming in from my garden. It didn’t take me long to come up with something as yummy as this low carb zucchini boat pizza recipe.

I cut my zucchini in half lengthwise and scooped out the seeds. Then I brushed olive oil on the zucchini inside the boat. Sprinkled garlic powder on it. Then I added the spaghetti sauce and spread it with a spoon over the entire boat. Added pepperoni and cheese depending on the kid or family member. Baked it at 400* for 25 minutes (check at 20 minutes) until cheese is brown and zucchini is soft. It was big hit at my house! Try it! As a low carb recipe it’s a good one.
